Our New Favorite Cookie...

This recipe is for everyone who dreads heading back into the kitchen to bake cookies for the next cookie swap. We are delighted to share this winning recipe straight from the pages of Leite's Culinaria. This delicious, crispy Ginger Crunch-Green Tea Biscotti is a delicious addition to your cookie repertoire. Proud to be associated with Leite's, it is my pleasure to share with you this easy to make, delightfully different, recipe.

Note: Green Tea Powder, an ingredient in the biscotti, can be a bit of a challenge to find. Look locally in health food stores or specialty Asian markets that carry Japanese ingredients. If you're particularly fond of ginger and green tea there's plenty of room in this recipe to amp up the flavor. I pulverized crystallized ginger in my food processor (add a bit of cake flour to keep the ginger from sticking to the metal blade) and added it to the batter along with the almonds. And don't be afraid to be generous with your tablespoons of the green tea powder. The flavor is subtle, but oh so wonderful ... especially with a hot cup of green tea.
